The cuisine of the Mammato Restaurant keeps intact the love for traditional flavors which, from generation to generation, have remained in the menu proposed by Francesco until today.

A humble and creative chef, Francesco (fifth generation of the Mammato family) reworks his grandmother Antonietta’s dishes – whose flavors and memories of preparation he preserves intact – with personal innovations that enhance their consistency and flavours.

From the “Scialatiello alla Mammato” (with prawns, calamari, mussels and clams), to the super traditional “Spaghetto alle Vongole” (where the clams – Francesco recalls – were then shelled individually), to the “Spaghetto alla Saracena” (with pine nuts, Cetara anchovies and grated bread), an invention of his grandmother Antonietta and which Francesco has revisited with Peperone Crusco and crumbled tarallo.

The authenticity and passion of Mammato cuisine resists the prevailing gourmet fashions, preferring to safeguard ancient flavors, with a touch of modernity in the new combinations proposed by Francesco.
